The famous (or infamous) cheese which was catapulted into public awareness by a Wallace and Grommit film.  Before that it was really only known by ardent cheese fans.  The cheese is a very fruity, soft,  rinded item with a pungent aroma.  This is not why it is called Stinking Bishop.  The rind is washed with Perry and the variety of pear used to make the Perry is called Stinking Bishop.  The pear was named after a local man who's surname was Bishop and who's nickname was "Stinking" which is reputed to refer to his character rather than his personal hygiene.  It is made by Charles Martell in Gloucestershire from the milk of Gloucester cows.  The whey from the cheese forms part of the diet of the pigs he rears.

It is a very soft cheese and has a wooden band held in place by an elastic band to help keep its shape.  For this reason, even though it is expensive, and at 2kg it really is, we can only ship it as a whole cheese.  It is an absolutely delicious cheese for that special occasion, though, to be fair, it does make you wonder why your nose is above your mouth!
