Gjetost ( M, P.V., )

This is like the marmite of cheeses - love or hate it.  It made from a mixture of cows and goats milk and a copious amount of milk is heated to drive of the water element, leaving brown sweet cheese.  The taste is like fudge made with condensed milk and every 250gm block has about 1150 calories in it.  The norwegians tend to take it with them when cross country skiing and one variety is called "Ski Queen".  This, we think, is a better variety.  Sold in singles only.
