Halloumi ( M, P., )

This famous Cypriot cheese is made with mixed milk and in variable proportions - just like it always has been depending on what milk was available at the time.  It has a little mint in it and is unusual in that it can be put on a skewer on a BBQ and it just goes crispy on the outside and soft on the inside without falling into the coals.  It can also be fried.  Nigella has a couple of recipes using Halloumi in her first book.  The cheese comes vacuum packed in brine and mint which should be rinsed off before eating or cooking and is sold in 250gm blocks.
