There are buffalo cheeses other than mozzarella. This one is a hard, cheddar-like cheese made with Buffalo milk. Don't think the wild west or cape buffalo in South Africa. The milk comes from draught animals and the herds are in England. The important thing is that Buffalo milk contains 43% less cholesterol than cows milk. It can be used just like cheddar and tastes like an average cheddar with a bit of a twang. The half-moon cheese in the picture is about 1kg and comes covered in green wax.
