Not many good Dutch cheeses find their way to these shores but luckily this one does. The cheese has a black covering and the inside is a dark gold colour with small dots which are calcium lactate crystals which give a slight crunch to the cheese. These crystals do not start formng until a cheese is around sixteen and a half months old. This hard cheese is at least 18 months old and has a hint of caramel in its flavour from bite one. A real beauty. When we say "whole cheese" with this one we actually mean an eigth of a whole cheese as the are made in 20kg rounds and we get 2.5kg as a piece.
