This square soft cheese made from pure pasteurised ewe's milk with a mixed rind has plenty of character and a distinctive taste. After 21 days maturation, an ivory cheese with a soft, melt-in-the-mouth texture develops under its light brown to orange-coloured, slightly uneven rind.
