An artisan, hard cheese from the Basque region of France. The cheese is pulp-pressed (rather than cooked) and matured for several weeks. The word Etorki translates as ‘Origin’

A delicious cheese made from the milk of Pyrénées sheep. This cheese has a burnt caramel flavour developed from the quality of the milk used. A firm cheese, Etorki is very supple and can be bent without breaking or crumbling.
