Produced on the island of Menorca, the cheese is mild with a semi-hard texture and a distinctive orange rind (created by rubbing oil and paprika around the cheese).

This Mahon is ripened for around 6 months and has a spicy, slightly salty taste. The salt is due to the levels of sea salt in the grasses the Menorcan cows feed on.

The cheese has a milky flavour with hints of butter as well as dried fruit and nuts.

Easy to slice and great for melting, this is one of the most versatile of Spanish cheeses.
