A very unusual cheese is Gjetost. Its Norwegian and looks like, and to a great extent, tastes like, fudge. Made, again unusually, from the whey of cows milk and goats milk and pronounced “Yay-toast”, the Norwegians tend to take it with them when cross-country skiing. Think Kendall Mint Cake but made from milk. At 1120 Kcals per 250gm cube it has all the energy you might need. Servicemen who have spent winters in Norway tend to like it. The cheese knife that you pull over the surface to take a thin sliver was invented for it. Good in a cheese quiz night!
