It is thought that, in what could be called biblical times, in the golden crescent between the rivers Tigress and Euphrates (modern day Iraq more or less), some goatherd was ambling about with a goatskin flask half full of goats’ milk. The heat and motion was supposed to have produced the first cheese.
Happily, a neighbour had stored some grapes in an earthenware urn and then forgotten about them. As they rotted down, the natural yeasts on the grapeskins caused them to ferment. Result: the world’s first cheese and wine party!
Gratefully we’ve come a long way since then and our choices of cheeses and wines have improved considerably.
I’ve no idea what those early ancestors would have made of smoked Stilton, but it pairs quite well with a sweetish red of all things, but also with a glass of bitter.
